Greek cooking-
































I want to dedicate this post to my brothers. To my younger brother ,Yorgos, because he loves the sound of the words' freska fasolakia' together... And to my older brother Stathis, because he provided the extra virgin olive oil that I cooked with. Stathis is a Master olive oil producer (among other star quality accomplishments- but more about those in a couple of months...)

My  So  Very  Easy  Recipe (my most favorite kind):
'Freska Fasolakia'


Clean the beans and cut in half if they are too long.


Clean and cut in smallish pieces:
 2 or 3 potatoes
3 or 4 zucchini

chop: 1 onion
2 cloves of garlic
a nice, fat  bunch of parsley


Add 2T of real green, sweet smelling olive oil in a large pot.
Stir in the onions for 5'.
Add garlic,for a long minute.


Throw in the lot.
Add 3/4 cup of water, salt ,pepper, and 2T of tomato paste.
Put the lid on your pot and leave them to simmer for about 25'.


I always burn mine a tiny bit, but I like them better that way. 
Just keep an eye on them... and stir once in a while to make sure
all is well-

They are great with some feta sprinkled on top, and they go brilliantly with beer (what?-yes beer)

 And yes, all is well-
